We will soon be receiving the beautiful tableware from French Gien with a thin colored edge that creates an aesthetic expression. Roasted squash cream with burrata & salted almonds
A delicious green and simple dish that works as an appetizer, lunch or a light dish for dinner.
Squash cream
1 zucchini
1/2 pot of basil
1/2 pot parsley
2 cloves garlic
3 tablespoons olive oil
1 splash of white wine (or lemon)
1 teaspoon salt
1 tablespoon crème fraîche
Pepper

For serving
1 burrata
1/2 cup salted almonds
A splash of extra-virgin olive oil
1/2 cup salted almonds

How to do it
Preheat the oven to 150 degrees. Cut the squash into small pieces and place it in an ovenproof dish.
Drizzle with olive oil, crushed garlic and salt. Roast in the oven for 1 hour.
Mix together with basil, parsley and crème fraîche. Season with white wine and salt.
Spread the cream in a semi-deep dish, add the burrata, sprinkle with salted almonds, a little pepper and a good olive oil.
